Cold Spinach Dip

Cold Spinach Dip flavored with vegetable soup mix, green onions and minced water chestnuts for texture.

We love a good dip for parties. So easy to make the night before or early in the morning and let it chill. My other favorite is Smoked Salmon Cheese Ball.

I first tried this Cold Spinach Dip about 15 years ago at a Halloween party. My husband’s friend Danny gave me the recipe and I had put it on this cute recipe card. Now this many years later I can make this dip with my eyes closed. It is the best cold spinach dip you will ever try. If I’m making hot spinach dip, I like to use this recipe.

How to make Cold Spinach Dip:

You will need:

  • 1 cup mayonnaise
  • 1 cup sour cream
  • 12 oz. frozen spinach (THAWED)
  • 8 oz. can whole water chestnuts, drained and minced
  • 1 bunch green onion, sliced
  • Knorr vegetable soup mix (or leek if you can find it)

  • Make sure to thaw the spinach dip, you do not want to microwave it. Set out a few hours before you need it or thaw overnight in the fridge.
  • Drain the spinach. You’ll want to wring it out good with your hand AND put in a clean dish towel and wring out all the water.
  • Add the spinach to a large bowl and the remaining ingredients.
  • Stir. Transfer to a small bowl that you want to serve it in and refrigerate for at least two hours before serving.

What are water chestnuts?

  • They are not nuts, they are an aquatic vegetable that grows in marshes – Wikipedia
  • They have a crunchy texture and are often used in Asain cuisine.

Where do I find water chestnuts at the store?

I find water chestnuts in the Asian section of the store, the area where I grab soy sauce from.

Can I add baby shrimp or crab?

Yes! This dip is the perfect base for baby shrimp or lump crab meat (we often have extra during crabbing season!).

How do I serve Cold Spinach Dip?

  • Sliced sourdough bread or French baugettte
  • Triscuits or wheat thins
  • Veggies such as carrots or celery
  • OR serve in a hollowed out bread bowl with cubes of bread for eating

Ingredients:

  • 12 oz. frozen spinach (thaw out overnight or on counter for a few hours)
  • 8 oz. can whole water chestnuts drained and minced
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1.4 oz. pkg. Knorr vegetable soup mix (or Knorr leek soup mix)
  • 1 bunch green onions sliced

Suggested serving options:

  • sliced bread
  • crackers (wheat thins or triscuits)
  • vegetables (carrots and celery sticks)

Instructions:

  • Drain the spinach. Do this by wringing it out with clean hands and putting it in a dish towel and squeezing out the water.
  • Add the spinach to a small bowl. Add remaining ingredients and stir until combined.
  • Transfer to a bowl you would like to serve the dip in. Cover in plastic wrap.
  • Chill for at least 2 hours before serving.
  • Serve with sliced bread, crackers or vegetables.
