Bursting with sweet and bright tangy flavor, these 2 Ingredient Lime Bars couldn’t be any easier to make. A flavor twist on the classic lemon bar, these are perfect for both the experienced baker or the novice.

If you’ve ever needed to bring a last minute dish to a gathering or had unexpected company drop by, then you’ve experienced the looking in the pantry and fridge to see what you can whip up quickly. This is the perfect recipe for those occasions.

There’s only two required ingredients to make these delicious lime bars, and three if you want to dust them with some powdered sugar. Unlike traditional citrus bars, these are light and fluffy with a slight spongey texture.

Even if you’re not making these last minute, having an easy dessert recipe is always a good thing, especially a two ingredient dessert.

With a quick rummage in the pantry you’ll need a can of key lime pie filling and an angel food cake mix. Powdered sugar isn’t essential but it does give them an extra touch of sweetness along with a touch of fancy. The full recipe is in the recipe card below the images.

How to make 2 ingredient lime bars

Step 1 — Preheat the oven to 350℉ (176℃) and spray a 9×13-inch baking dish with non-stick cooking spray. In a large bowl gently fold in the lime pie filling into the cake mix until it is just combined. Take care to not over mix.

Step 2 — Pour the batter into the prepared baking dish and spread it evenly.

Step 3 — Bake for 20-25 minutes or until the top starts to brown. Check for doneness by interesting a toothpick into the center, it should come out clean.

Step 4 — Slice the lime bars into squares and dust with powdered sugar, if using.

How to serve

Here is how I serve these easy key lime bars:

  • Add whipped cream or cream cheese frosting to the completely cooled bars for a touch of creaminess.
  • Add fresh lime zest to the freshly baked bars or a squeeze of fresh key lime juice before dusting with powdered sugar for extra tanginess.
  • Plate with a scoop of vanilla ice cream.

How long will these lime bars stay fresh?

Store the bars in an airtight container at room temperature for up to 2 days or refrigerate the bars in a sealed container for up to a week.  

Can I freeze the lime bars?

Yes, you can freeze the bars for up to one month. For best results, wrap them individually in plastic wrap then store them in a freezer safe bag or container. Allow to thaw in the refrigerator before serving.

Will lime curd work instead of pie filling?

Yes, that’s a great substitution.

Ingredients:

  • 16 ounce angel food cake mix
  • 21 ounces key lime pie filling
  • Powdered sugar optional; for dusting

Instructions:

  • Preheat the oven to 350℉ (176℃) and spray a 9×13-inch baking dish with non-stick cooking spray.
  • In a large bowl mix together the key lime pie filling and angel food cake mix using a spoon or spatula. Mix gently until just combined.
  • Pour the batter into the prepared baking dish and spread it evenly.
  • Place the baking dish in the oven on the center rack. Bake for 20-25 minutes or until the top starts to brown. Check for doneness by interesting a toothpick into the center, it should come out clean.
  • Remove the pie bars from the oven and place on a cooling rack. Allow the pie bars to cool completely, about 1 hour.
  • Slice the pie bars into squares and dust with powdered sugar. Serve and enjoy!
