Instructions
Place a 1/2 cup of champagne in the microwave-safe measuring cup and heat for 1 minute or until hot. Note that the microwave can make liquids hotter than boiling without actually boiling, so don't burn yourself.
Add the gelatin and whisk until no lumps remain. If lumps remain, remove them from the mixture.
Add the remaining champagne and simple syrup to the mixture and stir.
Line up your shot cups on a plate or moveable flat surface. You will be moving these into the fridge.
There will be a lot of foam at the top, to prevent getting that into the shots, use an injector or baking syringe, fill the shot cups to be about 3/4 of the way full. You can also use the measuring cup to pour and use a spoon to hold back as many of the bubbles as you can, though the baking syringe works best. DON'T OVERFILL or the lid will make a mess of them.
Place in the fridge for 2 hours or until set. Do not put the sanding sugar in before they’re solid. If you do, it will dissolve and turn the shots goldish yellow.
Sprinkle the tops of the shots with gold sanding sugar, place the lids on the top. Now you are ready for your party!

Replace ½ cup of the wine with white grape juice, Sprite, or ginger ale. What size containers do I use for jello shots?Two-ounce size jello shot containers work the best for size. You can find them at the grocery store near the solo red cups or you can buy them in bulk at a restaurant supply store. Can I use a different kind of wine?Yes, you can make jello shots with any white wine, including prosecco! Choose your favorite flavor and make it your own.How long do Jello shots last?Jello shots last about 3-5 days in the fridge. Since we are using champagne for these jello shots, I think they don't last as long. Use within 2 days for the best flavor.
