In a large mixing bowl, cream the butter and brown sugar using a spatula. Add the egg and almond extract and whisk until combined.
In a separate bowl, mix the flour, baking soda, and salt. Add to the large bowl and mix well. Add the cherry juices and food coloring and continue mixing until well combined.
Fold in the cherries and chocolate chips
Use a spoon or cookie dough scoop to make 1” cookie dough balls. Place on a silicone lined cookie sheet leaving at least 1-2” between each cookie.
Bake for 12-15 minutes. Remove from heat and let cool for 5 minutes. Then, place the cookies on a wire cooling rack and allow them to cool before eating. Garnish with a drizzle of chocolate over the top. Enjoy!

If you have a white, yellow, or cherry cake mix you use a cake mix.
